1 package (20 ounces) SeaPak® Popcorn Shrimp
6 hard-boiled eggs, peeled and cut in half lengthwise
1/4 cup mayonnaise
1 tablespoon Dijon mustard
4 dashes Tabasco sauce or other favorite hot sauce
Salt and pepper
Chopped chives for garnish (optional)
Prepare popcorn shrimp according to package directions and keep shrimp warm.
Remove egg yolks from the hard-boiled egg halves and place the yolks in a small bowl. Set the remaining egg-white halves aside.
Mash the egg yolks with a fork. Stir in mayonnaise, mustard and Tabasco sauce, until thoroughly combined.
Add salt and pepper, to taste.
Using a small spoon or a pastry bag fitted with a large tip, fill the egg-white halves with the egg-yolk mixture.
Place popcorn shrimp on top of each egg-yolk filling.
Garnish with chopped chives, if desired.
