4 ounces prosciutto, lean bacon, or Canadian bacon thinly sliced
4 ounces provolone (or other smoky cheese), sliced
4 eggs
6 cups mixed greens
1 tablespoon red wine vinegar
1 tablespoon honey
1 tablespoon olive oil
pinch of salt
